Noma consistently ranks one of the world's top restaurants. It's a clever idea to come to Sydney for 10 weeks from Jan 2016 after a successful stay in Tokyo this year where the waiting list for reservations was reportedly 60,000. Noma is famed for experimenting with local ingredients. We had this dish (amongst many) called "hen and the egg" in Copenhagen after booking months ahead!
